Ingredients

Ingredients: 

  • 4-5  hard-boiled eggs, peeled and chopped
  • 2 ripe avocado, diced
  • 2 tablespoons chopped parsley leaves
  • 1 teaspoon chili flakes (or more to taste)
  • 4-5 tablespoons of egg mayonnaise 
  • Salt to taste

Directions/ Procedure:

  1. Start by chopping the hard-boiled eggs into small pieces. You can go for a coarse chop or make them even finer, depending on your preference. 
  2. Cut the ripe avocado into small cubes.  Make sure to remove the pit and peel the avocado before dicing.
  3. Chop the parsley leaves finely and add them to the bowl with the eggs and avocado.
  4. Sprinkle the chili flakes over the mixture.  Start with 1 teaspoon and add more if you want a spicier salad.
  5. Add the egg mayonnaise to the bowl and gently combine everything using a spoon or spatula. Be careful not to overmix, as you want to keep the avocado chunks intact.
  6. Add salt to the salad according to your taste. You can also add a squeeze of lemon juice or a pinch of black pepper if you like.
  7. Serve the egg avocado salad immediately or chill it in the refrigerator for a while.
