Ingredients

Ingredients: 

  • 1 head of lettuce, chopped 
  • 1/2 cup chopped parsley 
  • 1 cup diced cooked chicken
  • 1/4 cup chopped olives
  • 1/2 cup diced tomatoes 
  • 1/2 cup diced cucumber
  • 1/2 cup diced yellow bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup chopped onions 
  • 2 tablespoons honey 
  • 2 tablespoons lemon juice (freshly squeezed is best)
  • 1 clove garlic, minced 
  • 2 tablespoons egg mayonnaise (Homemade- Recipe given below) 
  • 1 tablespoon butter, softened 
  • Salt and pepper to taste

Directions/ Procedure:

1. Prep the Salad Base: 

    * Wash and chop the lettuce into bite-sized pieces.

    * Finely chop the parsley. 

    * Dice the chicken into small pieces. 

    * Slice the olives, tomatoes, cucumber, bell peppers, and onions.

2. Create the Dressing:

    * In a small bowl, combine the honey, lemon juice, minced garlic, egg mayonnaise, and softened butter.

    * Whisk together until all the ingredients are well blended and the dressing is smooth.

    * Taste and adjust the seasoning with salt and pepper to your liking.

3. Assemble the Salad:

    * Combine all the chopped salad ingredients in a large bowl.

    * Pour the dressing over the salad and gently toss everything together.  

4. Serve and Enjoy:

    * Serve the salad immediately or refrigerate for later.
