Ingredients
1. Tuwar dal- ½ cup
2. Jowar flour- 1 cup
3. Besan- ½ cup
4. Turmeric powder- 1 tsp
5. Red chili powder- 1.5 tsp
6. Himalayan Pink Salt- 1 tsp (As per taste)
7. Ajwain- ½ tsp
8. Coconut oil- 2 tbsp
9. Cumin seeds- 1 tsp
10. Heeng- ¼ tsp
11. Dried red chili- 2
12. Fresh curry leaves- 4-5
13. Ginger garlic paste- 1 tbsp
14. Tamarind- 1 small piece
15. Chopped Coriander leaves- 1 tbsp
Directions
Dhokli-
1. In a glass bowl take 1 cup of jowar flour, ½ cup of besan, ½ tsp of turmeric powder, ½ tsp of red chili powder, ½ tsp of salt, ½ tsp of ajwain and 1 tbsp of coconut oil.
2. Mix everything together, rub the flour with the oil. Now gradually add some water and knead into a soft dough.
3. Cover the dough with the lid and let it rest for 15 minutes.
4. After 15 minutes knead the dough one more time and apply some coconut oil on your palm and make small balls of the dough.
5. Roll the ball into roti shape and cut it into small square shapes with a cutter or you can use a knife. (You can make any shape of your choice)
6 Giving it a smaller shape helps them to cook faster.
7. Repeat the procedure for the rest of the dough and now your Dhoklis are ready.
Dal-
1. Take ½ cup of tuwar dal into a pressure cooker, wash and rinse it 2-3 times.
2. Add 1 cup of water and close the lid, take around 2-3 whistles until the dal is soft.
3. In a steel pan add 1 tbsp of coconut oil, 1 tsp of cumin seeds, ¼ tsp of heeng, 2 dried red chili, 4-5 curry leaves and 1 tbsp of ginger garlic paste and saute for around 30 seconds.
4. Add around 3 cups of water, mix everything together. Now add ½ tsp of turmeric powder, 1 tsp of red chili powder and bring this to a boil.
5. Add all the dhoklis in this and mix everything.
6. Add 1 tsp of salt and cover the lid and let it cook for around 20-25 minutes. Keep stirring to make sure that dhoklis should not stick to each other.
7. Now you can add cooked dal in the pan and mix it together. Add 1 small piece of tamarind in it.
8. You can add some water depending upon the consistency. Let it cook for 10 minutes.
9. After 10 minutes sprinkle chopped coriander leaves and turn off the flame.
10. Serve it warm with ghee.
