Ingredients
- 3 Mangoes
- 200-250 ml Coconut milk
- 100-150 gms shredded coconut
- 80 -100 gms Dates powder
- 3-4 strands of Kesar
- 1-2 tbsp ghee
- 2-3 Cardamom as per taste
Directions
1. Prepare the mango puree.
2. Prepare the kesar infused milk and keep it aside for later use.
3. Add ghee to a heated pan along with, dates powder and mango puree, and cook it for 5-10 mins, until the dates dissolve completely.
4. Add coconut milk and cook it for another 10-15 minutes until it gets mixed evenly.
5. Add shredded coconut, kesar infused milk and cardamom powder to the mixture and cook it till it takes the texture of the mashed potato.
6. Once done, spread it into a tray and refrigerate it for a minimum of 2 hours.
7. Cut the set mixture into desired shape and size.
8. Your mango barfi is ready to be served!
