Ingredients

½ cup ragi flour (finger millet flour)

¼ cup oat flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup mashed ripe banana

2 large eggs

½ teaspoon vanilla extract

2 tablespoons honey

½ cup coconut milk

Butter for cooking

For date syrup:

½ cup dates

Water

Directions

For Pancake 

  1. Mix ragi flour, oat flour, baking powder, baking soda, and salt in a large mixing bowl.
  2. Mix mashed banana, eggs, vanilla extract, honey, and coconut milk in another medium mixing bowl.
  3. Now pour the liquid ingredients over the dry ingredients and mix until combined. Do not overmix.
  4. Heat a non-stick pan over medium heat.
  5. Brush the pan with butter.
  6. Pour a ladle full of batter into the center of the pan.
  7. Cover the pan with a lid and cook until bubbly and slightly set from the top.
  8. Flip the pancake using a silicon spatula and cook from the other side.
  9. Remove on a plate.
  10. Make all the pancakes in the same manner.
  11. Top with banana slices, and honey.
  12. Serve warm.

Directions/ Procedure: For Dates Syrup

  1. Take some dates in a bowl, de-seed them, and soak them in water for 15-20 mins to hydrate.
  2. Take some water in a pan, add the soaked dates to it, and bring it to a boil.
  3. Once it has boiled, lower the flame and simmer it for another 5-7 mins. 
  4. Transfer the boiled and cooled dates into a mixer and blend them well.
  5. Transfer it to a strainer or a muslin cloth, and strain it. (Optional step)
  6. Add the syrup into a pan and simmer it for 5-7 mins or until it reaches the desired consistency.
  7. Let it cool down completely and store it in the refrigerator for further use.
